Crème Brûlée with Mixed Fruits
3 cups heavy cream
⅓ cup of sugar
6 egg yolks
1 tsp vanilla extract
½ cup brown sugar packed
Fresh or canned fruits such as pineapple chunks, strawberries, bananas, mandarin oranges
- In a one-quart saucepan, heat the heavy cream over medium heat until you see tiny bubbles forming around the saucepan’s edge.
- Meantime, blend your egg yolks in a two-quart pot, whisking it together with the sugar. Stir in the heavy cream slowly.
- Start cooking the mixture over medium-low heat, frequently stirring with a metal spoon until it forms a light coating at the back of your spoon. This should take about 15 minutes. Make sure that it does not boil. Add in the vanilla extract.
- Pour the mixture into a broiler-safe casserole and refrigerate for 6 hours until it is thoroughly chilled.
- Preheat the broiler according to the manufacturer’s instructions. Sift the sugar on top of the chilled mixture and broil it until the sugar has melted about 4 minutes. Refrigerate.
- Place your casserole in the middle of a tray. Arrange your fruits around the pan and serve portions of the fruit with crème brûlée topping.
