Spinach Cream Soup
Great summer soup.
- 50 gr Spinach
- 2 l Water
- 2 Onions
- 60 gr Butter
- 350 gr Flour
- 250 ml Double cream
- 2 yolks Egg
- 1 Lemon
Boil the spinach and chopped onion in a water for about 10 minutes.
Discard on colander. Save the broth.
Chop the spinach and onion in a blender, adding a few tablespoons of the broth.
Melt butter in another pan and mix with flour.
Add 600 ml of vegetable broth. Stir until broth boils.
Add spinach and onions into the broth, cook for another 5 minutes.
Add cream, nutmeg and salt. Bring to a boil again.
Especially good in hot weather.
